When you stop in to F.X. McRory’s Steak Chop and Oyster House for a meal or a drink, chances are Mick McHugh will be there to greet you. Since the first day the restaurant opened in November 1977, Mick has been there talking with customers, discussing Seattle events and history with friends, and championing everything Seattle has to offer to visitors and residents. It’s been written that if Seattle has an official greeter, Mick is the one. And that no one has served more cocktails to more Seattle sports fans than Mick McHugh.
Mick’s history as a Seattle restaurateur is well known around the city and worth retelling. In 1967, McHugh and Tim Firnstahl formed a partnership with another fellow and started their food service careers at Bellevue's El Nido Inn in Eastgate. In 1971, they closed the El Nido and spent the next four years researching Jake O'Shaughnessey's Restaurant which they opened in 1975 by the Seattle Center. Then, in 1977, they opened F.X. McRory's Steak Chop & Oyster House opposite the then Kingdome in Pioneer Square. On October 24th, 1988 in order to divide their restaurant properties, Mick and Tim flipped a coin flip off Seattle's Space Needle. Mick retained F.X. McRory’s Steak Chop & Oyster House.
A native of Seattle, Mick McHugh graduated from Seattle University in 1965 with a degree in business. He is a founding board member of the Matt Talbot Center, a daytime shelter for street people in Seattle, and a member of Seattle University's Board of Regents and also serves as a trustee at Holy Names Academy.
